There is not a built in method for Domain Migration Administrator (DMA) or Exchange Migrator (EM) to add information to the existing logs. The only way to log extra information would be to create a new log during the migration process. You could write a Microsoft VBscript that would create an output text file, and then dump the desired information into that text file using standard Microsoft VBscripting. You can add this script into the available Event Script triggers that are exposed in both DMA and EM.
